Chicken, Spinach and Ginger Dumplings

Ingredients:

  • Thirty pieces wonton wrappers
  • Three teaspoons cornstarch (cornflour)
  • One small red chili, seeded and chopped
  • teaspoon fish sauce
  • One teaspoon Asian sesame oil
  • Two teaspoons soy sauce
  • Two cloves garlic, crushed
  • One teaspoon fresh ginger, peeled and grated
  • Three scallions (spring onions), chopped
  • 250 g (8 oz) ground chicken, minced
  • One bunch spinach, stemmed, washed and chopped

For chili sauce

  • cup rice vinegar
  • Two tablespoons sugar
  • Two tablespoons water
  • One teaspoon lemon juice
  • teaspoon fish sauce
  • One small red chili, finely chopped (seeds removed)

Steps:

  1. Place spinach in a steamer basket or bamboo steamer.
  2. Partially pour the pot or wok with water and bring to a rapid simmer. Make sure the steamer does not touch water.
  3. Put the steamer over water, cover and steam for 2-3 minutes until spinach is soft.
  4. Remove the steamer from heat and allow to cool.
  5. Drain and squeeze out excess water and chop finely.
  6. In a medium bowl, place the spinach, chicken, scallions, garlic, ginger, soy sauce, sesame oil, fish sauce, chili and cornstarch and mix thoroughly.
  7. Put wonton wrappers on work surface and cover with a damp kitchen towel.
  8. Place two teaspoons filling in the centre of the wrapper and brush the edges with water.
  9. Gather edges and twist to seal or fold wrapper in half pressing edges together with fingers to seal.
  10. Cover with a damp kitchen towel and set aside.
  11. Repeat the process with remaining wrappers.
  12. For the chili sauce, combine ingredients, stirring constantly until sugar is dissolved.
  13. Line a steamer basket or large bamboo streamer with parchment paper.
  14. Partially pour the pot or wok with water and bring to a rapid simmer. Make sure the steamer does not touch the water.
  15. Put the steamer over water, cover and steam for 10 minutes. Add more water if needed.
  16. Lift steamer from heat and carefully remove dumplings.
  17. Serve warm with chili sauce.
