Mini Chili Tomato Meatballs with Udon Noodles

Cooking Time: 8-10 minutes

Ingredients:

  • Two tablespoons olive oil
  • teaspoon salt
  • 780 g (25 oz) fresh udon noodles
  • salt and pepper
  • One egg, beaten lightly
  • One small red chili, seeded and chopped
  • Two tablespoons fresh parsley, chopped
  • Two tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • One clove garlic, crushed
  • One large size onion, finely chopped
  • 500 g (1 lb) ground beef, minced

For the sauce

  • Light tomato sauce
  • One small red chili, seeded and finely chopped (optional)
  • Two tablespoons fresh parsley, chopped

Steps:

  1. In a medium size bowl, combine onion, garlic, tomato paste, Worcestershire sauce, chili, egg, parsley, beef, salt and pepper. Mix thoroughly.
  2. Line a steamer basket or large bamboo steamer with parchment paper.
  3. With wet hands, take about 1 tablespoon mixture at a time and shape into small balls. Arrange in a single layer and place in the steamer.
  4. Pour the pot or wok with water and bring to a rapid simmer. Make sure the steamer does not touch the water.
  5. Put the steamer over water, cover and steam for 8-10 minutes until meatballs are cooked.
  6. Add noodles and salt to water for the last 6 minutes of cooking or until tender.
  7. Drain noodles and toss with olive oil to keep from sticking.
  8. Heat tomato sauce in a small saucepan while cooking meatballs. Add chili if desired.
  9. Divide noodles into 4 plates and serve topped with meatballs and sauce. Sprinkle with parsley.
